
Sausage, eggs, and cheese give this breakfast dish its delicious flavor! It is a straightforward recipe with simple ingredients that kids and picky husbands won’t turn up their noses at! My mom made this when I was growing up, and I have adapted and enlarged the recipe to feed my tribe. On those mornings when cereal just won’t cut it, and you need those kiddos to eat some actual-sustaining-protein kind of breakfast, it’s a great way to multitask (meaning Mom throws in the oven, and then does other stuff!) May be served with fresh fruit on the side for an eye-pleasing “company” breakfast, perfect for Christmas morning with family.
This may be prepared the day before and placed in the fridge overnight, but it is fine to bake immediately as well.
Recipe For “The Big One” Breakfast Casserole
Ingredients
- 1.5 lbs. sausage
- 9 eggs
- 9 slices of bread or buns
- 2 c. shredded cheese
- 1.5 t salt
- 1 t mustard (I use the condiment)
- 3 c. milk
Note: This is a great way to use up the heels of bread leftover from a loaf, or leftover hamburger or hot dog buns. I count one bun (top and bottom) as 2 slices of bread.











Instructions
- Preheat oven to 350 degrees.
- Brown sausage or bacon and drain. (If you want to use bacon, a great time saving trick is to use real bacon crumbles found in the salad dressing aisle of the store. Or if you want, go really crazy, use 1 lb. of browned sausage and 1 cup of bacon crumbles!)
- Tear bread into chunks.
- Beat eggs slightly, and mix in all other ingredients.
- Spray a 10″x15″ casserole dish with nonstick cooking spray.
- Pour mixture into dish and bake 50 minutes, until eggs are set and casserole is browning around the edges.

- 1.5 t salt
- 1 t mustard
- 3 cups milk
